Method:

- Once the tea is warm (not hot), stir in honey and lemon juice (if using).
- Sprinkle the gelatin over the surface and let it bloom for 1–2 minutes.
- Reheat gently on low and stir until the gelatin is fully dissolved—do not boil.
- Pour the liquid into silicone moulds or a small glass dish.
- Refrigerate for 1–2 hours or until firm.
- Pop out of moulds or cut into squares.
- Store in an airtight container in the fridge for up to 1 week.
